Season steaks with pepper and salt, and place in a vacuum-sealable bag. Cook for 1 hour at 128 degrees F.

Place the potatoes in boiling water and cook until tender for about 20 minutes. Strain and place in a mixing bowl. Add butter and mash well. Season with pepper and salt.
